Seafood Pasta With Poached Eggs
- 1 onion small, finely chopped
- 3 garlic cloves minced
- 2 sprigs parsley chopped
- 1 cod pack frozen shredded
- 1 can peeled tomatoes diced
- 2 3/8 cups macaroni
- 4 eggs
- salt to taste
- olive oil to taste
- Drizzle a frying pan with olive oil and saute the onion, garlic, and parsley over medium heat.
- Once it begins to brown, add the still-frozen cod, cover the pan, and cook for about 5 minutes.
- After five minutes, add the tomatoes and enough water to cook the pasta.
- Once boiling, add the macaroni and flavor with salt to taste.
- When the pasta is about halfway cooked (after 4 or 5 minutes), stir it well and then add the eggs to the boiling water to poach.
- Cover the pan and let it cook until the eggs are done.
- Serve immediately.
