Indonesian Peanut Fritters

  1. Finely chop peanuts in a blender container or food processor bowl.
  2. Add rice flour, coriander, curry powder, cumin and 1/2 teaspoon salt.
  3. Blend or process until combined.
  4. Add water, egg, onion and garlic; blend or process until well combined.
  5. Batter will be thick.
  6. Pour oil into a wok or large skillet to 1 1/2" depth.
  7. Heat to 365F.
  8. Spoon 1 tablespoon of peanut batter into the hot oil.
  9. Repeat for 3 or 4 more fritters.
  10. Fry 1 minute loosening edges of fritters as they set.
  11. Turn and fry 2 minutes more on until
