Guilt-Free Fettuchini Alfredo Sauce
- 1/2 cup water
- 1 cup greek yogurt
- 1 ounce reduced fat cream cheese
- 2 teaspoons sea salt
- 1 tablespoon black pepper
- 1 tablespoon rosemary
- 1 tablespoon olive oil
- 1 tablespoon basil
- 1 cup fresh spinach chopped
- 2 teaspoons garlic
- In a saucepan, combine the water, greek yogurt and cream cheese.
- With heat setting on low, use a whisk to combine the ingredients. Whisk slowly and constantly as the heat melts and thickens the sauce. It may take up to 15 minutes to be a smooth sauce.
- Once smooth, whisk in remaining ingredients.
- Cover and let simmer (not boil). Every few minutes, whisk the sauce to ensure it isn't burning on the bottom.
- Pour over pasta and serve
