La Surena Chicken Tenders With Wild Mushrooms

  1. Preheat the oven to 50 degrees Celsius.
  2. Spread the mushrooms on a baking sheet and placed in the oven for up to 10 hours to dry them out.
  3. Once they are dry, grind them in a mortar or food processor until they become powder.
  4. In a bowl, mix equal parts mushroom powder and breadcrumbs.
  5. Cut the chicken into pieces, season with salt and pepper.
  6. In a bowl mix the egg and water. Coat the chicken pieces in the egg mixture, and then dredge in the breadcrumb mixture.
  7. Fry the chicken in a deep fryer or skillet at 180 C until the chicken is browned and cooked through.
  8. Serve with the desired sauce.
