La Surena Chicken Tenders With Wild Mushrooms
- 2/3 pound wild mushrooms
- breadcrumbs
- 1 skinless chicken breast
- salt
- ground black pepper
- 1 egg
- 1 tablespoon water
- Preheat the oven to 50 degrees Celsius.
- Spread the mushrooms on a baking sheet and placed in the oven for up to 10 hours to dry them out.
- Once they are dry, grind them in a mortar or food processor until they become powder.
- In a bowl, mix equal parts mushroom powder and breadcrumbs.
- Cut the chicken into pieces, season with salt and pepper.
- In a bowl mix the egg and water. Coat the chicken pieces in the egg mixture, and then dredge in the breadcrumb mixture.
- Fry the chicken in a deep fryer or skillet at 180 C until the chicken is browned and cooked through.
- Serve with the desired sauce.
