Orange (Or Lemon) Cake
- 310 grams flour
- 450 grams sugar
- 1 stick unsalted butter
- 3 eggs
- 1 cup milk choice
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 Orange or 2 lemons
- 2 cups powdered sugar
- Preheat the oven to 350 degrees.
- Zest the orange or lemon into the sugar and mix thoroughly.
- Soften butter and beat with sugar until creamy and then add one egg at a time.
- Add the vanilla to the milk and slowly add to the batter.
- In a separate bowl mix the flour, salt, and baking powder together.
- While the mixer is running slowly add the flour mixture little by little until the beautiful batter is prepared.
- Butter your pans and then top with buttered parchment paper or wax paper. I use 2 8.5" loaf pans but I'm sure a bundt pan would work great as well (adjust baking time accordingly). Pour in mixture and put into the oven for somewhere between 28 and 35 minutes.
- Pour in mixture and put into the oven for somewhere between 28 and 35 minutes. The toothpick should come out nice and clean. Let them cool in the pan for a few minutes before removing and allowing to to finish cooling on a rack.
- At this point add your powdered sugar into a pourable container and either juice the orange or lemons into the powdered sugar and stir. If the mixture is thin and doesn't look like a glaze add a little more powdered sugar until the consistency is perfect (if using lemon you may want to dilute the lemon juice a little with water as it can be quite sour).
- Once the cakes are cooled on the racks i put foil under the cooling rack to catch the excess and pour the glaze evenly across the top and let it sit. If you really want it to be pretty glaze one more time about 15 minutes later. Enjoy!
