Caesar Salad Deluxe
- 1 clove garlic, cut
- 1/2 c. olive oil
- 1/2 tsp. Worcestershire
- 1/4 tsp. dry mustard
- 1/4 tsp. paprika
- 1 avocado
- 1 lemon
- 1 tsp. sugar
- 1/2 tsp. salt
- dash of pepper
- 1 1/2 c. crisp croutons
- 1 (11 oz.) can mandarin oranges, drained
- 1 (6 oz.) jar marinated artichoke hearts
- salad greens
- Drop garlic into half pint jar.
- Add oil, Worcestershire, mustard, paprika, sugar, salt and pepper.
- Let stand several hour. About 10 minutes before serving, discard garlic and pour oil mixture over croutons.
- Break 2 quarts salad greens into bowl. Arrange mandarins, quartered artichoke hearts and sliced avocado on top of greens.
- Bring bowl to table.
- Pour crouton mixture over top and squeeze the juice of the lemon over all.
- Toss gently. Serves 6 to 8.
