No Bake Chocolate Cherry Pie

  1. Place a can of coconut milk in fridge overnight, remove just before baking, flip the can bottom up and open (should see liquid on top, save for smoothies). Transfer cream at bottom into a deep bowl and whip on high with mixer for a few mins, until fluffy. Add maple syrup and vanilla extract, blend until combined. Set aside.
  2. In a small saucepan, on medium heat melt coconut oil. Add maple syrup, cacao powder, vanilla extract and stir to combine. Remove from heat and add almond flour. Mix with spatula until smooth dough forms.
  3. Transfer to a 9" pie dish and press into a pie crust, making sure to cover the sides of the dish. Start pressing the crust into the dish with your hands and then using a measuring cup.
  4. Pour filling from first step into the crust and level with spatula. Freeze for two hours.
  5. Toast almonds in a small skillet on low/medium heat until lightly brown, about 5 minutes. Stir frequently and set aside.
  6. In a small bowl, combine chocolate chips with 1tbsp of coconut oil and microwave for 30secs. Stir until smooth and microwave more if necessary. Set aside.
  7. Remove pie from the freezer and add a layer of strawberries, followed by raspberries and then sliced banana. Top with toasted almonds and drizzle with chocolate.
