Country Store Apple Butter
- 4 pounds cooking apples
- 16 fuji
- 2 granny smith
- 1 cup apple cider vinegar
- 2 cups water
- 1 1/2 cups sugar
- 1 cup dark brown sugar
- 2 tablespoons cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- Cut the apples into eight pieces, without peeling or coring them, cut out damaged parts.
- Put them in a large pot, add the vinegar and water, cover; bring to a boil, reduce heat to simmer and cook until apples are soft, about 20-30 minutes. Remove from heat.
- Ladle apple mixture in a foodmill under a large bowl to catch the apple pulp.
- Add apple pulp to slow cooker, add remaining ingredients and mix well.
- Cook on HIGH, UNCOVERED for 5-6 hours, stirring every 30 minutes or so.
- Can pints according to manufacturer's directions or freeze in containers.
