Beira Rotten Cake
- 2 eggs
- salt
- 1 3/4 cups brown sugar
- 2 teaspoons lard at room temperature
- 1 orange zest
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon powder
- 7/8 cup milk
- Preheat oven to 180 degrees Celsius.
- Grease a cake pan with lard, and set aside.
- In a bowl, mix the flour with baking powder and cinnamon. Set aside.
- In another bowl, beat the eggs well with a pinch of salt.
- Add the sugar, and mix again, thoroughly.
- Add 1 tablespoon of lard and orange zest, and whisk again to a fluffy and uniform cream.
- Add the flour mixture, alternating with the milk.
- Stir with a spoon, but without beating. When well mixed, put the dough in the mold, and bake for 35 minutes.
- Check for doneness with a toothpick , remove the cake from the oven, and unmold when warm.
- This waiting time will allow the cake to get cheese-like on the inside, something typical of rotten cakes.
