Beira Rotten Cake

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a cake pan with lard, and set aside.
  3. In a bowl, mix the flour with baking powder and cinnamon. Set aside.
  4. In another bowl, beat the eggs well with a pinch of salt.
  5. Add the sugar, and mix again, thoroughly.
  6. Add 1 tablespoon of lard and orange zest, and whisk again to a fluffy and uniform cream.
  7. Add the flour mixture, alternating with the milk.
  8. Stir with a spoon, but without beating. When well mixed, put the dough in the mold, and bake for 35 minutes.
  9. Check for doneness with a toothpick , remove the cake from the oven, and unmold when warm.
  10. This waiting time will allow the cake to get cheese-like on the inside, something typical of rotten cakes.
