Coca-Cola Empanadas

  1. For the Pastry Cream:
  2. In a saucepan, heat the milk, vanilla extract, and 125 grams sugar.
  3. In a bowl, add the flour, corn flour, the rest of the sugar, and egg yolks. Mix.
  4. Temper the egg yolks by adding a dash of hot milk. Repeat 3 times.
  5. Add the tempered egg mixture to the rest of the hot milk and stir continuously with a wooden spoon over low heat until it thickens.
  6. Let it cool.
  7. For the Empanadas:
  8. In a bowl, add the flour and shortening. Use your hands to mix.
  9. Make a hole in the center and add the Coca-Cola. Mix.
  10. Place on a flat surface and knead.
  11. Cover the dough with plastic wrap and let it rest for 30 minutes at room temperature.
  12. Preheat the oven to 180 degrees Celsius.
  13. Stretch the dough and cut out circles.
  14. Add pastry cream to each circle. Close and seal the edges.
  15. Place on a baking tray.
  16. Bake for 15 to 20 minutes or until golden brown at the bottom.
  17. Place on a cooling rack and sprinkle with superfine sugar.
  18. Serve.
