Coca-Cola Empanadas
- 4 1/4 cups milk
- 1 teaspoon vanilla extract
- 1 1/4 cups sugar
- 7 2/3 tablespoons flour
- 1/2 cup corn flour
- 8 egg yolks
- 8 cups flour
- 2 7/16 cups vegetable shortening
- 1 1/2 cups coca-cola cold
- superfine sugar
- For the Pastry Cream:
- In a saucepan, heat the milk, vanilla extract, and 125 grams sugar.
- In a bowl, add the flour, corn flour, the rest of the sugar, and egg yolks. Mix.
- Temper the egg yolks by adding a dash of hot milk. Repeat 3 times.
- Add the tempered egg mixture to the rest of the hot milk and stir continuously with a wooden spoon over low heat until it thickens.
- Let it cool.
- For the Empanadas:
- In a bowl, add the flour and shortening. Use your hands to mix.
- Make a hole in the center and add the Coca-Cola. Mix.
- Place on a flat surface and knead.
- Cover the dough with plastic wrap and let it rest for 30 minutes at room temperature.
- Preheat the oven to 180 degrees Celsius.
- Stretch the dough and cut out circles.
- Add pastry cream to each circle. Close and seal the edges.
- Place on a baking tray.
- Bake for 15 to 20 minutes or until golden brown at the bottom.
- Place on a cooling rack and sprinkle with superfine sugar.
- Serve.
