Chinese Meatballs
- 1 lb. ground beef or turkey
- 2 eggs, beaten
- 3/4 c. minced celery
- 1/2 c. ground toasted almonds
- 1/2 c. breadcrumbs
- 1 clove garlic, crushed
- 1 Tbsp. soy sauce
- 1/2 tsp. salt
- 1/3 c. cornstarch
- 2 Tbsp. vegetable oil
- 1 (15 1/4 oz.) can pineapple chunks (undrained)
- 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1 c. chicken broth
- 1/2 c. vinegar
- 2 Tbsp. soy sauce
- 1 medium-size green pepper, cut into thin strips
- Combine first 8 ingredients; shape into 1-inch balls.
- Dredge in 1/3 cup cornstarch.
- Pour oil into a 13 x 9 x 2-inch pan; add meatballs and bake at 350u0b0
- for 35 to 40 minutes.
- Drain and set aside.
- Drain pineapple, reserving 1/2 cup juice; set pineapple aside.
