Gluten Free Rolled-Out Sugar Cookies

  1. Stir together the almond flour, baking soda, salt, cinnamon, and xanthan gum in a large bowl.
  2. Cream together the butter and sugar until just combined.
  3. Add the egg and vanilla and beat until combined.
  4. Stir the dry ingredients into the wet, you may need to use your hands a bit.
  5. Place dough in a ziplock bag and refrigerate 15-30 minutes.
  6. Preheat oven to 375 degrees.
  7. Place dough between 2 pieces of greased parchment paper and roll out to abou 1/8 in. thick.
  8. Use your favorite cookie cutter to make your favorite shaped cookies. Carefully transfer to a greased cookie sheet placing them 1 inch apart.
  9. Bake for 8-10 minutes or until golden.
  10. Decorate as desired and enjoy!
