Gluten Free Rolled-Out Sugar Cookies
- 3 1/2 blanched almond flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon xanthan gum
- 1 egg
- 10 tablespoons Earth Balance vegan butter
- 1 teaspoon vanilla
- Stir together the almond flour, baking soda, salt, cinnamon, and xanthan gum in a large bowl.
- Cream together the butter and sugar until just combined.
- Add the egg and vanilla and beat until combined.
- Stir the dry ingredients into the wet, you may need to use your hands a bit.
- Place dough in a ziplock bag and refrigerate 15-30 minutes.
- Preheat oven to 375 degrees.
- Place dough between 2 pieces of greased parchment paper and roll out to abou 1/8 in. thick.
- Use your favorite cookie cutter to make your favorite shaped cookies. Carefully transfer to a greased cookie sheet placing them 1 inch apart.
- Bake for 8-10 minutes or until golden.
- Decorate as desired and enjoy!
