Spicy Sausage Pasta
- 1 tablespoon extra-virgin olive oil
- 3 italian sausages casings removed
- 1 onion large, finely chopped
- 2 cloves garlic finely chopped
- 27 ounces chopped tomatoes
- 1/4 cup red wine
- 1/2 teaspoon dried chili flakes
- 1 handful flat leaf parsley leaves fresh, chopped
- 14 ounces rigatoni penne or other short pasta
- grated Parmesan cheese to serve
- Heat oil in a large frying pan over high heat. Cook sausage, stirring to break up, until browned and just cooked through. Set aside.
- Add onion and cook, stirring, until softened. Add garlic and cook, stirring, for 1 min, or until fragrant. Add tomatoes and wine. Simmer, stirring occasionally, for 10 mins, or until thickened. Season. Return sausage to pan along with chili flakes and parsley. Stir until warmed through.
- Meanwhile, cook pasta in salted, boiling water until al dente. Drain, reserving 1/2 cup cooking water. Add pasta to sausage mixture along with cooking water. Toss to combine.
- Serve immediately, sprinkled with Parmesan.
