Braised Chicken With White Beans & Baby Spinach
- 1 pound boneless skinless chicken thighs
- 1/2 teaspoon dri thyme leaves, crush
- 1/8 teaspoon ground black pepper
- 1 1/2 tablespoons promise buttery spread
- 1 sweet onion
- 3 cloves garlic finely chopped
- 1 1/2 cups chicken broth
- 1/4 cup dry white wine or water
- 15 ounces cannellini or white kidney beans, rinsed and drained
- 10 ounces baby spinach leaves washed
- Season chicken with thyme and pepper. Melt 1 tablespoon Promise(R) Buttery Spread in 12-inch nonstick skillet over medium-high heat and brown chicken, turning once, 6 minutes. Remove chicken from skillet; set aside.
- Add remaining 1/2 tablespoon Spread in same skillet and cook onion, stirring occasionally, 6 minutes or until tender. Add garlic and cook 30 seconds. Add broth and wine and bring to a boil over high heat. Reduce heat to low and return chicken to skillet. Simmer covered 5 minutes. Stir in beans and spinach. Simmer uncovered, stirring occasionally, 5 minutes or until chicken is thoroughly cooked.
