Prickly Pear Granita
- 1 cup white granulated sugar
- 2 cups water
- 4 pears prickly, chilled then peeled, cactus pears
- juice a lemon
- Place a large, flat metal dish in the freezer for two hours.
- Put the sugar and water in a saucepan and bring to the boil.
- Boil for 5 minutes, stirring occasionally.
- Remove from the heat and allow to cool completely. Chill.
- Peel the prickly pears, chop roughly and place in a blender.
- Blend to a thick pulp.
- Measure the pulp into a bowl.
- Add the equivalent amount of cooled sugar syrup.
- Stir in the lemon juice.
- Pour the mixture into the frozen dish and place in the freezer.
- After 30 minutes, scratch and scrape the mixture with a fork to form crystals.
- Continue scraping and scratching every 20 minutes until you have a pile of fluffy, crystalline flakes.
- Pile the granita into chilled martini glasses and serve immediately.
