Savory Raspberry Granita
- 12 ounces frozen raspberries or fresh
- 3 tablespoons raspberry vinegar
- 2 teaspoons sugar
- ground black pepper to taste
- 2 3/4 ounces watercress
- ciabatta Toasted, to serve
- Place the raspberries in a pan with the vinegar and sugar. Heat gently, stirring, until the raspberries are soft. Add black pepper to taste and pour into a freezer safe container. Allow to cool slightly, then place in freezer until just firm, about 2 1/2 hours. Stir the mixture with a fork to break up the ice crystals and return it to the freezer for about 1 hour.
- Remove the granita from the freezer 30 mins before serving. Place the watercress in 4 glasses. Break up the granita with a fork and spoon it on top of the watercress. Garnish with black pepper and serve with toasted ciabatta.
