Junior'S Cheesecake
- 2 tsp. unsalted butter
- graham crackers
- 7/8 c. sugar
- 3 tsp. sifted cornstarch
- 3 oz. cream cheese at room temperature
- 1 extra large egg
- 1/2 c. heavy cream
- 3/4 tsp. vanilla
- Preheat oven to 450u0b0.
- Liberally grease the side and bottom of an 8-inch spring-form pan with butter.
- Crush to powder enough graham crackers to lightly coat bottom.
- Refrigerate pan until ready to use.
- Mix the sugar with the cornstarch.
- Add the cream cheese and stir to blend well; stir in egg and blend again.
- Add heavy cream, a little at a time and mix.
- Stir in the vanilla. Spoon the batter into prepared pan.
- Bake for approximately 40 minutes until top is golden brown.
- Transfer cheesecake to a rack and let cool for 3 hours.
