Chorizo And Thyme Farfalle
- 1 pound farfalle pasta
- 2 tablespoons olive oil
- 1/3 pound chorizo sliced
- 1 zucchini quartered lengthways and sliced
- 2 cloves garlic peeled and crushed
- 8 sprigs fresh thyme leaves stripped from stems, plus extra for garnish
- 1/2 cup red wine
- 1 jar tomato sauce
- 1/2 cup whipping cream
- 1 ounce olives pitted back, sliced
- Cook the pasta in boiling salted water according to the package instructions. Heat the oil in a separate saucepan and fry the chorizo, turning, until browned. Add the zucchini and garlic and cook for 1 min. Season with black pepper. Add the thyme, wine, tomato sauce, cream, olives and a pinch of sugar and bring to a boil. Simmer for 5 mins. Drain the pasta and toss with the sauce. Serve garnished with thyme.
