Beef & Vege Meatballs W/ Tomato Sauce
- 1 grated zuchinni/courgette
- 2 grated carrots
- 500g free-range mince beef
- 1 cup panko breadcrumbs
- 2 tsp wholegrain mustard
- 1 tbsp finely chopped parsley
- 1 finely diced brown onion
- 1 minced garlic clove
- 1 can of cherry tomatoes
- 1/2 can of pizza sauce
- 1 tsp brown sugar
- Squeeze excess liquid from zucchini. Combine with carrots, parsley, mustard, breadcrumbs and beef, then shape into balls and set aside.
- Heat a drizzle of oil on medium heat, cook onion and garlic until softened (3 - 4 mins). Add meatballs, cook for 2 - 3 mins, then add cherry tomatoes, pizza sauce and sugar to pan.
- Bring pan to a simmer, cook for 10-12 mins until meatballs are cooked through.
