Spicy Chicken And Couscous
- 2 tablespoons olive oil
- 8 boneless, skinless chicken thighs cut into thirds
- 1 onion large, sliced
- 1 red pepper large, seeded and sliced
- 2 chorizo halved, sliced
- 1 red chili pepper long, finely chopped
- 2 teaspoons smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 28 ounces tomatoes whole, coarsely chopped
- 1 cup chicken stock
- cilantro leaves
- green beans
- plain yogurt
- couscous
- Preheat the oven to 325u0b0F
- Heat 1 tbsp of the olive oil in large ovenproof skillet on high heat. Brown chicken in two batches. Transfer to a plate.
- Heat remaining 1 tbsp oil in same pan on medium-high heat. Saute onion and pepper for 4-5 mins, until tender. Add chorizo and chili pepper. Cook for 3-4 mins, until chorizo is crisp. Add spices, cook, stirring for 30 seconds, until fragrant. Add tomatoes and stock. Bring to a boil. Return chicken to skillet. Cover.
- Bake for 40-45 mins. Serve with couscous, steamed green beans, yogurt and cilantro leaves.
