Coconut Curry Beet Soup

  1. In a pot bring the first 8 ingredients to a boil.
  2. Lower heat and simmer 15 minutes or until the beets and carrots are soft.
  3. Pour half of the mixture into a food processor and whirl until smooth.
  4. Add the yogurt and whirl again.
  5. Take the mixture and pour it back into the pot with the rest of the soup and stir. If too thick, add a bit more broth to make the consistency to your liking.
  6. Ladle into bowls and garnish with coconut.
