Lime And Poppyseed Shortbread Cookies
- 7 tablespoons salted butter room temperature
- 4 tablespoons cane sugar plus 1 tbsp. for decorating
- 1 tablespoon poppyseeds
- 1 teaspoon lime zest
- 2 tablespoons lime juice freshly squeezed
- 2 tablespoons milk
- 1 1/4 cups flour
- Preheat the oven to 160 degrees Celsius.
- Line a baking tray with parchment paper.
- Pulse the butter and 50 gr. of sugar together in the food processor.
- Add in the poppyseeds, lime zest, lime juice, and milk and mix until a semi-liquid batter forms.
- Pulse in the flour until a ball forms.
- Roll out the dough into a 1/2-centimeter thickness. Cut out forms using either cookie cutters or an upside down glass.
- Place the cookies on the baking tray and pierce the tops with fork tines.
- Sprinkle them with 1 tablespoon of sugar and bake for 10 minutes until golden on the bottoms.
