Lime And Poppyseed Shortbread Cookies

  1. Preheat the oven to 160 degrees Celsius.
  2. Line a baking tray with parchment paper.
  3. Pulse the butter and 50 gr. of sugar together in the food processor.
  4. Add in the poppyseeds, lime zest, lime juice, and milk and mix until a semi-liquid batter forms.
  5. Pulse in the flour until a ball forms.
  6. Roll out the dough into a 1/2-centimeter thickness. Cut out forms using either cookie cutters or an upside down glass.
  7. Place the cookies on the baking tray and pierce the tops with fork tines.
  8. Sprinkle them with 1 tablespoon of sugar and bake for 10 minutes until golden on the bottoms.
