Pretzel-Crusted Brownies With Nutella Buttercream Frosting

  1. Preheat oven to 350 degrees. Line a 13x9 pan with foil, cutting the foil long enough to form handles on either end of the pan. Spray lightly with vegetable oil and set aside.
  2. Make crust: Place pretzels in the bowl of a food processor. Pulse until broken up. Add sugar and pulse until combined. Add melted butter and salt and pulse until mostly powder with a few small pieces. Press firmly and evenly into prepared pan. Bake 12 - 15 minutes until firm. Set aside.
  3. Make brownies (or optionally use your own favorite recipe or a boxed mix): Add cocoa to softened butter in a small bowl; mix well. In a separate small bowl, combine flour, salt, and baking powder. In a large bowl, beat eggs with sugar. Add cocoa mixture to egg mixture and stir. Add flour mixture and vanilla to egg mixture; stir until just combined. Add chocolate chips. Pour over crust in pan, spread evenly into edges and corners, and bake 28-35 minutes until top begins to crack. Set aside and allow to cool completely.
  4. Make icing: Combine softened butter, Nutella, powdered sugar, vanilla, and 1 T milk. Whip on medium high until the color lightens, adding more milk as necessary to reach a spreadable consistency.
  5. When brownies are completely cool, lift from pan using foil ends as handles. Peel foil gently away from sides and slide brownies off onto a board. Spread evenly with icing. Cut into 1.5" x 1.5" squares; these are very rich.
