Lemon Cranberry Loaves
- 1 1/4 cups fresh cranberries Finely chopped
- 1/2 cup chopped walnuts Finely
- 1/4 cup granulated sugar
- 1 lemon cake mix
- 1 cream cheese pkt, 3 oz, softened
- 3/4 cup milk
- 4 eggs
- confectioners' sugar
- Preheat oven to 350* .
- Grease and flour 2 8x4 loaf pans.
- Stir together cranberries, walnuts and sugar in large bowl; set aside.
- Combine cake mix, cream cheese and milk in large bowl.
- Beat at med. speed with electric mixer for 2 minutes.
- Add eggs, one at a time, beating for an additional 2 minutes.
- Fold in cranberry mixture.
- Pour into pans.
- Bake 45 to 50 minutes or till toothpick inserted comes out clean.
- Cool in pan 15 minutes.
- Loosen loaves from pans.
- Invert onto cooling racks.
- Cool complete; dust with confecti
