Brussels Sprouts Fritters
- 1 pound brussels sprouts
- 4 green onions thinly sliced
- 2 cloves garlic minced
- 6 slices cooked bacon minced
- 1/4 cup parsley minced
- 1/2 cup manchego cheese shredded
- 1/4 cup flour
- 1 egg
- 2 teaspoons coarse kosher salt
- 1 teaspoon black pepper
- 1 apple sliced into matchsticks
- 1/2 cup manchego cheese sliced into matchsticks
- 1/4 cup juice from an orange
- 1 tablespoon juice from a lemon
- coarse kosher salt
- pepper freshly ground, to taste
- Preheat the KitchenAid(R) Combination Wall Oven to 425u0b0 F.
- Now prepare the Brussels sprouts with the KitchenAid(R) Santoku Knife. Remove the remaining stalks. Then slice the Brussels sprouts into very thin slices.
- Transfer the Brussels sprouts to a mixing bowl. Add the green onions, garlic, bacon, parsley, Manchego, flour, egg, salt, and pepper to the bowl and mix.
- Grab a couple tablespoons of the mixture in your hand and give it a good squeeze so it binds together. Form patties and place them on a baking sheet.
- Bake in the Combination Wall Oven for about 20 minutes or until the fritters are browned and cooked in the center.
- For the slaw, add the apple, Manchego, orange juice, lemon juice, salt, and pepper to a bowl and mix.
- To serve, add a scoop of the slaw on top of the fritters, and garnish with some parsley. Serve immediately.
