Oven-Baked Castagnole Fritters

  1. Preheat the oven to 160C.
  2. Place the water in a medium saucepan, add the oil and a pinch of salt.
  3. As soon as the water begins to boil, remove the saucepan from the stove and add the flour all at once, stirring quickly. Incorporate the eggs, one at a time, while continuously stirring.
  4. Add the ground cinnamon. If the dough is too soft, add some flour.
  5. Place spoonfuls of the batter on a baking sheet, leaving a space between each.
  6. Bake for approximately 20 minutes until golden and puffed.
  7. Remove the baking sheet from the oven and cool.
  8. Dip the fritters in the wine and then coat them with the sugar.
