Oven-Baked Castagnole Fritters
- 7/8 cup water
- 1 5/8 cups flour sifted
- 7 3/8 tablespoons vegetable oil
- 4 eggs
- salt
- vin santo
- ground cinnamon
- powdered sugar
- Preheat the oven to 160C.
- Place the water in a medium saucepan, add the oil and a pinch of salt.
- As soon as the water begins to boil, remove the saucepan from the stove and add the flour all at once, stirring quickly. Incorporate the eggs, one at a time, while continuously stirring.
- Add the ground cinnamon. If the dough is too soft, add some flour.
- Place spoonfuls of the batter on a baking sheet, leaving a space between each.
- Bake for approximately 20 minutes until golden and puffed.
- Remove the baking sheet from the oven and cool.
- Dip the fritters in the wine and then coat them with the sugar.
