Apricot Peach Chicken Stir Fry
- 12 ounces Smucker's Orchard's Finest Coastal Valley Peach Apricot Preserves
- 1/3 cup teriyaki sauce
- 2 tablespoons Crisco Pure Vegetable Oil divided
- 1 pound boneless, skinless chicken breasts cut into 1/4-inch wide strips
- 1 tablespoon minced garlic
- 16 ounces frozen broccoli stir-fry
- cooked rice
- STIR preserves and teriyaki sauce in small bowl until blended. Set aside.
- HEAT 1 tablespoon oil in large skillet over high heat. Add chicken; stir-fry 2 minutes or until lightly browned. Add garlic; stir-fry 15 seconds. Remove from skillet. Set aside.
- HEAT remaining 1 tablespoon oil in skillet. Add broccoli stir-fry. Stir-fry 3 minutes.
- ADD reserved chicken and preserves mixture. Cook 2 minutes or until sauce thickens and chicken is no longer pink in center. Serve with rice.
