Pork Ribs With Pomegranate

  1. Preheat oven to 200 degrees Celsius.
  2. Cut the ribs into strips.
  3. In an oven proof glass dish, add the pomegranate juice without seeds, 2 tablespoons of balsamic vinegar, Cassis, ginger, garlic cloves, 1 tablespoon of honey, salt, and pepper.
  4. Stir well, add the meat, and marinate for a few hours.
  5. Cover with aluminum foil, and cook in the oven for 45 minutes.
  6. After 45 minutes, pour 1 tablespoon of honey on the meat, and cook for another 15 minutes, uncovered.
  7. Remove from oven, and sprinkle meat with fresh thyme.
  8. Serve with an arugula salad mixed with pomegranate seeds.
