Mexican Pie

  1. Heat oven to 400u0b0.
  2. Lightly grease 10-inch pie plate.
  3. Cook and stir ground beef and onion in 10-inch skillet until beef is brown; drain.
  4. Stir in seasoning mix.
  5. Spread beef mixture in pie plate.
  6. Sprinkle with chilies and cheese.
  7. Beat remaining ingredients until smooth, 15 seconds in blender on high speed or 1 minute with hand beater.
  8. Pour into pie plate.
  9. Bake until golden brown and knife inserted halfway between center and edge comes out clean (25 to 30 minutes).
  10. Yields 6 to 8 servings.
