Impossible Cheesecake

  1. Heat oven to 350 degrees.
  2. Grease 9" pie plate.
  3. Place 3/4 cup sugar, baking mix, eggs, cream cheese, 2 tsp. vanilla and lemon peel in blender container. Blend on high speed, stopping blender occasionally to stir, until smooth about 3 minutes.
  4. Pour into pie plate.
  5. Bake just until puffed and center is dry, about 30 minutes. (Do not overbake).
  6. Mix sour cream, 2 Tbsp. sugar and 2 Tsp. vanilla. Spread carefully over top of cake, cool.
  7. Refrigerate until chilled, at least 3 hours.
  8. Serve with sweetened strawberries if desired.
