Impossible Cheesecake
- 1 cup sugar
- 1 cup Bisquick Baking Mix
- 2 eggs
- 16 ounces cream cheese cut in 1-inch cubes
- 2 teaspoons vanilla
- 1 teaspoon lemon peel grated
- 1 cup sour cream
- 2 tablespoons sugar
- 2 teaspoons vanilla
- Heat oven to 350 degrees.
- Grease 9" pie plate.
- Place 3/4 cup sugar, baking mix, eggs, cream cheese, 2 tsp. vanilla and lemon peel in blender container. Blend on high speed, stopping blender occasionally to stir, until smooth about 3 minutes.
- Pour into pie plate.
- Bake just until puffed and center is dry, about 30 minutes. (Do not overbake).
- Mix sour cream, 2 Tbsp. sugar and 2 Tsp. vanilla. Spread carefully over top of cake, cool.
- Refrigerate until chilled, at least 3 hours.
- Serve with sweetened strawberries if desired.
