Taboula (Libyan Version)
- 1 cup of cucumber cubed
- 1 cup of tomato cubed
- 1/2 head of lettuce finely chopped
- cup of green olives
- cup of black olives
- 1/2 cup of chopped fresh coriander
- 1/2 cup of chopped fresh mint
- 1/2 cup of chopped fresh parsley
- a juice of a halve lemon
- 2 tbsp of olive oil
- 1 tsp of salt
- 1 tsp of dried mint
- 1/2 tsp of cumen
- 1/4 tsp of black pepper
- 1/2 cup of chopped bell pepper
- 1/2 cup of chopped green onion
- 1/2 cup of borgol or coscos
- mix the chopped veggies in a big bowel
- soak the borgol in lemon juice add the olive oil and the seasoning and let it set
- when it sets add the borgol to the chopped veggies and add the olives and mix well
- serve with grilled meat or chicken.
