Chilli Vegetables With Cheesey Toasts

  1. Melt the Flora in a large saucepan and cook the onion and garlic for about 5 minutes, stirring occasionally, until soft.
  2. Add the carrot, sweet potato and parsnip and cook for about 5 minutes, stirring occasionally.
  3. Stir in the courgettes, chilli powder, tomatoes, tomato puree and beans. Cover and simmer gently for 15-20 minutes.
  4. Just before serving, spread one side of each bread slice with Flora and top with the cheese. Grill until bubbling and golden.
  5. Serve the cheesey toasts with the vegetables.
