Chilli Vegetables With Cheesey Toasts
- 1/2 ounce Flora Buttery
- 1 onion finely chopped
- 1 garlic clove crushed
- 4 1/16 cups carrot mixed, sweet potato and parsnip, cut into cubes
- 2 courgettes thickly sliced
- 1/2 teaspoon chilli powder
- 2 11/16 cups chopped tomatoes can
- 2 teaspoons tomato puree
- 2 5/16 cups butter beans can, drained
- 8 slices french bread
- 1 3/8 ounces Flora Buttery
- 5 2/3 tablespoons cheese mature, grated
- Melt the Flora in a large saucepan and cook the onion and garlic for about 5 minutes, stirring occasionally, until soft.
- Add the carrot, sweet potato and parsnip and cook for about 5 minutes, stirring occasionally.
- Stir in the courgettes, chilli powder, tomatoes, tomato puree and beans. Cover and simmer gently for 15-20 minutes.
- Just before serving, spread one side of each bread slice with Flora and top with the cheese. Grill until bubbling and golden.
- Serve the cheesey toasts with the vegetables.
