Savory Sbrisolona Cookies

  1. Preheat the oven to 170C.
  2. Combine the flour, cornflour, ground almond and hazelnut mixture, and the parmesan cheese.
  3. Add the egg yolks and the butter in pieces, combine by using the tips of your fingers, the mixture should resemble oatmeal.
  4. Add the pistachios and the pancetta.
  5. Butter and flour small pie plates and place the mixture inside to a thickness of 1 centimeter.
  6. Sprinkle with some poppy seeds and sesame seeds.
  7. Bake for 30 minutes or until lightly golden.
  8. Remove the appetizers from the oven, let cool for a few hours and serve.
