Savory Sbrisolona Cookies
- 1 1/4 cups flour
- 3 tablespoons cornflour extra fine
- 1 cup almonds
- hazelnuts
- 1 1/2 cups Parmesan cheese grated
- 2 egg yolks
- 2/3 cup butter
- 3 1/4 tablespoons pistachios toasted and coarsely chopped
- 1 3/4 ounces bacon sweet pancetta, cut into small cubes

- Preheat the oven to 170C.
- Combine the flour, cornflour, ground almond and hazelnut mixture, and the parmesan cheese.
- Add the egg yolks and the butter in pieces, combine by using the tips of your fingers, the mixture should resemble oatmeal.
- Add the pistachios and the pancetta.
- Butter and flour small pie plates and place the mixture inside to a thickness of 1 centimeter.
- Sprinkle with some poppy seeds and sesame seeds.
- Bake for 30 minutes or until lightly golden.
- Remove the appetizers from the oven, let cool for a few hours and serve.
