Cauliflower And Ground Beef Salad
- 1/2 head cauliflower cut into florets
- 2 tablespoons canola oil
- 7 ounces ground beef
- 2 red onions small, peeled, finely sliced
- 1/2 zucchini sliced
- 1 yellow pepper deseeded, diced
- 5 ounces cherry tomatoes halved
- 1/3 cup sour cream
- 3 tablespoons white wine vinegar
- 3 teaspoons sambal oelek
- 4 tablespoons olive oil
- 4 sprigs flat leaf parsley leaves fresh, chopped
- Blanch cauliflower florets in boiling salted water for 5 mins. Drain.
- Heat 1 tbsp canola oil in a pan. Brown ground beef for 5-6 mins. Season then let cool.
- Heat remaining canola oil in a pan. Saute onions, zucchini, peppers and tomatoes for 4 mins. Season then let cool.
- For the dressing, combine sour cream, vinegar and sambal oelek. Gradually whisk in olive oil and season. Toss with cauliflower, ground beef and vegetables. Sprinkle with parsley.
