Cheese Spirals And Spicy Sausage
- 1 2/3 cups wheat flour
- 5 5/8 tablespoons water
- 1 7/8 tablespoons olive oil
- 1 packet dry yeast 4.6 grams
- 1 pinch salt
- ketchup to taste
- dried oregano to taste
- 7/8 cup grated mozzarella cheese
- 1 3/4 ounces Chouricao or other spicy sausage, cubed
- 1 egg yolk for brushing
- Place the flour in a large bowl with a pinch of salt.
- Open a hole in the middle and add the yeast.
- Pour the water and the olive oil and stir to dissolve the yeast. Knead a little until the dough does not stick to the hands.
- Cover the bowl with cling film or a large cloth and let to leaven in a dry and warm place, until it doubles in size.
- Sprinkle the kitchen bench with flour and knead for a few minutes.
- Roll out the dough into a rectangle.
- Spread with ketchup, sprinkle with oregano, top with the grated cheese and the "Chouricao" (spicy sausage).
- Roll like a trunk and cut in moderately thick slices with a good knife.
- Leave the dough for a few more minutes, already on the oven tray, lined with greaseproof paper and brushed with egg yolk. Place in a preheated oven at 180 degrees Celsius, for approximately 25-30 minutes or until cooked.
