Hearty Two-Bean Vegetable Chili
- 1/4 cup promise buttery spread
- 1 sweet onion large, chopped
- 2 zucchini large, chopped
- 2 yellow bell pepper
- 16 ounces cannellini or white kidney beans, rinsed and drained
- 15 ounces black beans rinsed and drained
- 15 ounces tomato sauce no salt added
- 1 tablespoon chili powder
- 1 teaspoon dri oregano leaves, crush
- 1/4 teaspoon salt
- Melt Promise(R) Buttery Spread in 6-quart saucepot over medium-high heat and cook onion, zucchini and bell peppers, stirring occasionally, 8 minutes or until vegetables are tender and just starting to brown.
- Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to low and simmer 8 minutes or until heated through. Serve, if desired, with fat free sour cream.nnnIP: For a saucier Chili, stir in 1/4 cup water.
