Baked Chicken, Bacon And Mushroom Casserole
- 4 chicken breasts
- 8 bacon rashers
- 3 tablespoons sunflower oil plus extra to grease
- 1 onion diced
- 5 1/4 cups mushrooms sliced
- 1 pinch smoked paprika
- 1 2/3 cups whipping cream
- 1 11/16 cups vegetable stock weak
- 2 tablespoons cornflour
- 1 pinch caster sugar
- 7/8 cup cheddar grated
- chopped parsley to garnish
- Preheat the oven to 400u0b0F. Grease a baking dish with oil. Season the chicken and wrap 2 pieces of bacon around each breast. Heat 2 tbsp oil in a large frying pan, add the chicken and sear, turning for 4-5 mins. Remove from the pan and place into the baking dish.
- Now heat 1 tbsp oil in the frying pan then add the mushrooms and onions. Saute for 2-3 mins, stir in the paprika and sugar then season. Pour in the cream and stock and bring to a boil. Mix the cornstarch with a little water, then pour into the pan and simmer, stirring until thickened.
- Pour the mushroom sauce over the chicken. Sprinkle with cheese then bake for 20-25 mins. Sprinkle with parsley to serve.
