Encacahuatado Spicy Peanut Sauce With Chicken

  1. Place the chicken, water, salt, garlic, and onion in a large saucepan. Cook over medium heat until the chicken is cooked.
  2. Set aside and separate 2 1/2 cups of the broth to use in the sauce.
  3. Heat the water. Bring to a boil and add the chilies.
  4. Once the chilies have softened, puree until smooth in the blender. Sift and set aside.
  5. Separately, puree the tomato, onion, peppercorns, allspice, cloves, garlic, peanuts, cinnamon stick, and chicken broth until smooth. Sift and set aside.
  6. In a saucepan, heat the oil and add both mixtures. Bring to a boil and lower the heat.
  7. Cook for another 20 minutes, stirring occasionally.
  8. Season with salt and remove from heat.
  9. Serve the chicken and pour the sauce on top.
