Sweet Potato Protein Rich Pancakes

  1. In a bowl, mix together flour, baking powder, cinnamon and salt.
  2. In a separate large bowl, mix together remaining ingredients.
  3. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  4. Heat a frying pan over medium heat and coat with oil or pam spray.
  5. Use a 1/4 cup measure to scoop and pour batter onto pan forming pancakes.
