Almond Orange Cupcakes
- 7 tablespoons butter room temperature
- 1 cup sugar
- 3 eggs
- 1 1/4 cups almond flour
- 1 orange zested and juiced
- 15/16 cup cornstarch
- 9/16 tablespoon baking powder
- 1 1/4 cups powdered sugar
- 1/2 orange
- Preheat the oven to 160 degrees Celsius.
- In a bowl, cream together the butter and sugar.
- Beat in the eggs 1 by 1 then mix in the almond flour, orange zest, and orange juice.
- Sift in the cornstarch mixed with the baking powder and beat until just combined.
- Pour the batter into pre-greased cupcake pans.
- Bake for 10 minutes or until golden.
- Once the cupcakes are cool, glaze them.
- To make the glaze, mix the powdered sugar with just a few drops of orange juice at a time until you get the consistency of condensed milk.
