Easy Going Meal
- 4 skinned and boned chicken breasts
- 1 Tbsp. olive oil
- 1 green or red pepper, cut into strips
- 1 tsp. chili powder
- 1/2 tsp. each: salt, black pepper and ground cumin
- 1 c. long grain rice
- 1 c. water
- 1 small can tomato sauce
- 2 Tbsp. parsley
- Cut chicken into bite size pieces.
- Heat oil in a large, nonstick skillet over medium heat.
- Add chicken, green pepper and seasonings.
- Saute until chicken is lightly browned.
- Stir in rice until coated with seasonings.
- Stir in water and tomato sauce; bring to a boil, then cover skillet and reduce heat to low. Simmer until water is absorbed and rice is cooked.
- Remove from heat and add parsley. Cover and let stand for 5 minutes.
- This recipe is quite low in fat content.
