Easy Going Meal

  1. Cut chicken into bite size pieces.
  2. Heat oil in a large, nonstick skillet over medium heat.
  3. Add chicken, green pepper and seasonings.
  4. Saute until chicken is lightly browned.
  5. Stir in rice until coated with seasonings.
  6. Stir in water and tomato sauce; bring to a boil, then cover skillet and reduce heat to low. Simmer until water is absorbed and rice is cooked.
  7. Remove from heat and add parsley. Cover and let stand for 5 minutes.
  8. This recipe is quite low in fat content.
