Cerdo Al Pastor
- 1 pound pork knuckle jaccard and slice
- pineapple As needed, cut into 1/2-inch chunks
- 1/2 inch scallions
- As needed bamboo skewers
- shishito chile peppers As needed, roasted
- 3 lime cut into wedges
- 1/2 cup achiote
- 20 cloves garlic
- 1 onions
- 4 guajillo chiles guajillo, toasted
- 1/4 cup oil
- 1 tablespoon kosher salt
- 1 tablespoon black peppercorns
- 1. Blend achiote, garlic, onion, Guajillo chiles, oil, salt and pepper to make a paste
- 2. Rub pork with paste and let sit for at least two hours
- 3. To assemble skewers alternate Pork Knuckle, pineapple, and scallions
- 4. Grill skewers until meat is fully cooked
- 5. Serve with Shishito peppers and limes
