Cerdo Al Pastor

  1. 1. Blend achiote, garlic, onion, Guajillo chiles, oil, salt and pepper to make a paste
  2. 2. Rub pork with paste and let sit for at least two hours
  3. 3. To assemble skewers alternate Pork Knuckle, pineapple, and scallions
  4. 4. Grill skewers until meat is fully cooked
  5. 5. Serve with Shishito peppers and limes
