Quinoa Pomegranate Salad (Vegetarian)
- 2 cups spring mix
- 1 cup quinoa
- 1 cup apple slices slivered
- 1/2 cup pomegranate seeds
- 1/2 low-fat feta
- 1/4 cup chopped walnuts
- 1/4 cup mint slivered
- 3 tablespoons balsamic vinaigrette
- 2 tablespoons olive oil
- 2 teaspoons lemon juice
- salt
- Add 2 cups of water to the quinoa in a pot, bring to a boil, then reduce heat and cover. Let simmer for 15 minutes, occasionally stirring.
- Mix together the vinaigrette, olive oil, lemon juice, salt and pepper.
- n a bowl, add the rest of the ingredients, including the cooled quinoa. Drizzle over the dressing and massage well into the salad. Top with left over slivered mint.
