Almond Tofu
- 1/2 c. roasted almonds
- 2 lb. firm tofu, cut into 3/4-inch pieces
- 1/2 c. soy sauce, divided
- 2 Tbsp. peanut butter
- 1/4 tsp. garlic powder
- 1 tsp. onion powder
- 4 Tbsp. oil, divided
- 1 large bell pepper, cut in 1-inch squares
- 6 to 8 green onions, cut in 1 1/2-inch pieces
- 3 stalks celery, cut in 1-inch pieces
- 1 (8 oz.) can water chestnuts, sliced
- 1/2 tsp. powdered ginger
- 2 c. cold water
- 2 Tbsp. cornstarch
- Whip together 1/4 cup soy sauce, peanut butter, garlic powder and onion powder.
- Mix with the tofu cubes and marinate for 2 hours, stirring occasionally.
- Heat 2 tablespoons of oil in skillet; add tofu and brown until liquid is absorbed.
