Elaine'S Green Chili Hash
- 1 chicken
- 2 qt. water
- 1 Tbsp. salt
- 1 tsp. flavor enhancer
- 1 c. chopped onions
- 4 boiled eggs, chopped
- 2 cans chopped green chilies
- 3 Tbsp. pimientos, chopped
- 1/4 tsp. black pepper
- 1 c. milk
- 1/2 c. plus 1 tsp. cornstarch
- Boil chicken in water with salt and flavor enhancer until chicken is tender.
- Debone chicken, discarding skin.
- Chop into bite size pieces.
- Put chicken into pot with 1 1/2-quarts chicken broth.
- Add onions, eggs, chilies, pimientos and black pepper. Cook 5 minutes.
- Stir together cornstarch and 1/2 cup milk, then add the other 1/2 cup milk.
- Add this to boiling chicken mixture, stirring constantly until thickened.
- Serve over rice.
- Serves 6 to 8.
