Chocolate Superfood Cookies
- 2 cups almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/4 cup cocoa powder
- 2 tablespoons chia seeds
- 1/4 cup goji berries
- 1/3 cup coconut oil
- 1/4 cup honey
- 2 tablespoons coconut cream
- 1 tablespoon vanilla
- 1/2 teaspoon lemon juice
- Preheat oven to 350u0b0F
- Combine dry ingredients in a large mixing bowl, set aside
- Combine wet ingredients in another bowl
- Mix both bowls of ingredients very well and then add the wet ingredients to the large mixing bowl with the dry ingredients
- Using a cookie scoop, drop the dough onto a Silpat lined baking sheet and stick them into the oven
- Remove from oven and allow to cool for 10 minutes before removing from the baking sheet
- Store in an airtight container, they should last up to one week
