Amaretti Almond Cake
- 1 cup butter softened
- 7 ounces marzipan grated
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 4 eggs
- 2 1/2 cups all-purpose flour sifted
- 1 tablespoon baking powder
- 5 tablespoons milk
- 27 ounces cherries drained, patted dry
- 2 ounces Amaretti Cookies mini
- powdered sugar for dusting
- whipped cream to serve, optional
- Preheat oven to 325u0b0F. Grease and line a 10 inch springform pan.
- Beat together butter, marzipan, sugar, vanilla extract, almond extract and pinch of salt until creamy. Add eggs, 1 at a time, beating well between each addition. Fold in flour and baking powder then milk. Fold in cherries and cookies. Transfer to prepared pan, level surface and bake for 45-50 mins, until a skewer inserted in the center comes out clean.
- Let cool in pan for 30 mins then transfer to a wire rack to cool completely. Dust with powdered sugar and serve with whipped cream, if desired.
