Easter Speckled Cake
- 3/4 cup oil grape seeds
- 1/2 cup cane sugar white
- 2 eggs
- 2 3/4 cups flour semi-coarse, sifted
- 2 teaspoons baking soda
- 1 1/2 cups whole milk
- 1 tablespoon matcha powder
- 3 grams spirulina powder
- 1/2 teaspoon tumeric
- 3 7/8 cups mascarpone
- 13/16 cup greek yogurt plain, fat-free
- 10 tablespoons cane sugar white
- 2 tablespoons vanilla extract
- 1 teaspoon cocoa powder Dutch
- Mix the oil with sugar, stir in yolks, add milk, stir in sifted dry ingredients
- Divide the dough into two parts, stir in green powder into the first part and tumeric into the second part
- Whisk the egg whites and stir in slowly rigid foam, pour into greased and floured spring forms (22.5 cm (9 in) in diameter, 6.5 cm (3 in) in height)
- Bake in preheated oven at 170 u0b0 C (338 u0b0F) for about 15 min., then reduce temperature to 150 u0b0 C (305 u0b0F) and bake for 30-40 minutes or until toothpick stuck in the middle will be clean
- Filling and composition : cut one of the baked pastry into two slices, spread one third of the filling, cover with the second pastry, spread the second third of the filling, cover with the third pastry and coat the entire cake with the remaining filling
- Let it harden in the fridge, preferably overnight, mix the cocoa powder with vanilla extract, soak the new clean paint brush in a mixture and touch gently the cake to do random dots all over the cake, not to break the cream layer, first try painting on baking paper
- Place the cake in the fridge to allow the speckled pattern harden, before serving, carefully transfer the cake onto a nice rack, garnish with eggs, flowers and serve
