Sassy Black Bean Soup
- 1 tablespoon olive oil
- 1 cup chopped fresh or frozen onion
- 2 garlic cloves, minced (or 1/2 teaspoon garlic powder)
- 2 (15 ounce) cans black beans, drained and rinsed
- 1 (14.5 ounce) can stewed tomatoes, undrained and chopped
- 1 (10.5 ounce) can chicken broth
- 1/2 cup picante sauce
- 1/4 cup water
- 1 teaspoon ground cumin
- 2 tablespoon lime juice
- chopped fresh cilantro (optional)
- Heat oil in a large saucepan over medium heat until hot.
- Add onion and garlic; saut 5 minutes or until tender.
- Stir in beans and next 5 ingredients.
- Bring to a boil; reduce heat and simmer uncovered for 15 minutes.
- Remove from heat and stir in lime juice. Ladle into bowls and garnish with cilantro, if desired.
- Makes six one-cup servings.
