Sassy Black Bean Soup

  1. Heat oil in a large saucepan over medium heat until hot.
  2. Add onion and garlic; saut 5 minutes or until tender.
  3. Stir in beans and next 5 ingredients.
  4. Bring to a boil; reduce heat and simmer uncovered for 15 minutes.
  5. Remove from heat and stir in lime juice. Ladle into bowls and garnish with cilantro, if desired.
  6. Makes six one-cup servings.
