Shrimp In A Jacket
- water
- 1 lemon
- 1 bay leaf
- salt
- 2 1/4 pounds jumbo shrimp
- 1 5/8 cups flour
- 1 1/16 teaspoons active dry yeast
- 2 eggs whites separated from yolks
- 12 ounces beer choice
- vegetable oil for frying
- Boil some water with lemon and a bay leaf. When it comes to a boil, add salt and the shrimp.
- Once the shrimp have changed color, remove them and add them directly to a bowl of ice water.
- Peel the shrimp, leaving the tails on, and set aside.
- Sift the flour and yeast together.
- Whisk the egg yolks well and fold in the flour mixed with yeast.
- Incorporate the beer little by little until you have a medium-thick batter. Salt to taste but remember the shrimp are already salted.
- Beat the egg whites into soft peaks and carefully fold them into the batter.
- Pinching the shrimp by the tail, batter them, then fry them in plenty of hot oil until golden.
