Shrimp In A Jacket

  1. Boil some water with lemon and a bay leaf. When it comes to a boil, add salt and the shrimp.
  2. Once the shrimp have changed color, remove them and add them directly to a bowl of ice water.
  3. Peel the shrimp, leaving the tails on, and set aside.
  4. Sift the flour and yeast together.
  5. Whisk the egg yolks well and fold in the flour mixed with yeast.
  6. Incorporate the beer little by little until you have a medium-thick batter. Salt to taste but remember the shrimp are already salted.
  7. Beat the egg whites into soft peaks and carefully fold them into the batter.
  8. Pinching the shrimp by the tail, batter them, then fry them in plenty of hot oil until golden.
